To celebrate the summer solstice in Fairbanks – a day lasting 21 hours and 49 minutes from sunrise to sunset – we brewed this delicious Imperial IPA. Starting with a decoction mash for flavor complexity, the beer was heavily hopped in the kettle with New Zealand Waimea and US Centennial. After fermentation with a Kviek yeast strain, we dry hopped first with Waimea, then Mosaic hops.
