When it comes to beer – fresher is better, and nothing is fresher than locally brewed beer.  HooDoo Brewing Company makes beers of the highest quality from the world’s best ingredients.

Our brewery has been designed and built to brew classic English, German, Belgian and American beer styles.  You won’t find quirky names, or labels for our beers. We like to keep it simple – brew quality beers, with the best ingredients money can buy, keeping tradition in mind. While we are probably best known for our Kölsch or our American IPA, we have a variety of seasonal releases that just about please any palate.

21:49 BARREL AGED BGS

Taste: Dry, Mellow, Oak

To celebrate the summer solstice in Fairbanks – a day lasting 21 hours and 49 minutes from sunrise to sunset – we filled two freshly emptied French Oak Chardonnay barrels with our Belgian Golden Strong and let it breathe into and out of the wood for two months in our Taproom.  This aging added additional dimensions of spice, vanilla, and wood.

ABV: 8.4% // IBU: 30 // OG: 18.4

GERMAN KÖLSCH

GERMAN KÖLSCH

Taste: Crisp, Smooth, European

German Malt, German Hops, German brewing process. Our German Kölsch is a testament to simplicity, tradition and quality. Using the same malt, hops, and process as a brewery in Cologne, Germany (where Kölsch originates), we strived to replicate the style in every way possible. 4-Pack tallboys available in the Taproom to-go.

GERMAN GOSE

GERMAN GOSE

Taste: Tart, Citrus,Salt

First brewed in the early 13th Century in Goslar, Germany, this light and tart wheat beer is “kettle-soured” by steeping raw pilsner malt in the warm wort before boiling. After souring for approximately 24 hours, the wort is boiled, then coriander is added during the whirlpool. After fermentation, natural sea salt is added. 

ABV: 5.3% // IBU: 5 // OG: 11.8

BELGIAN WITBIER

BELGIAN WITBIER

Taste: Refreshing, Orange, Elegant

This style of Belgian beer has been produced for hundreds of years, and it all but died out in the 1950’s – until Pierre Celis revived the style with Hoegaarden Witbier.  A three grain ale consisting of barley, wheat, and oats, this light and refreshing beer also has a subtle citrus flavor and aroma, due to a cracked coriander and bitter orange peel steep at the end of the boil. 

ABV: 5.0% // IBU: 18 // OG: 11.6

AMERICAN IPA

AMERICAN IPA

Taste: Floral, Citrus, Balanced

Our IPA has a juicy backbone of Northwest US pale and crystal malts. Big floral and citrus hop aroma and flavor balance out the delicious malty base. A true-to-style American IPA.

ABV: 7.2% // IBU: 73 // OG: 16.5

HOODOO STOUT

HOODOO STOUT

Taste: Creamy, Coffee, Chocolate

A cross between an Oatmeal and Cream stout, this beer is made with dark roasted barley malts, flaked oats and milk sugar that lend it deep milk chocolate and creamed coffee aromas and flavors.

ABV: 5.8% // IBU: 45 // OG: 15.5

BELGIAN GOLDEN STRONG

BELGIAN GOLDEN STRONG

Taste: Dry, Fruity, Effervescent

A complex marriage of fruity, spicy and alcohol flavors over a soft base of pilsner malt, noble hops, and Belgian Candi Sugar.  Pale and demure with a beckoning sparkle and aroma, it’s dryness and drinkability is unassuming…and sinister.

ABV: 8.4% // IBU: 30 // OG: 18.4

2020 BARLEYWINE

2020 BARLEYWINE

Taste: Full-Bodied, Caramel, Warming

2020 Barleywine is our interpretation of a classic English Barleywine -the strongest of all the English Ales and a showcase of malt flavor and complexity. Focused on the rich, luscious flavors of Maris Otter malt from England, this beer has multiple layers of flavor and aroma that are explored with each flavorful sip.

ABV: 10.1% // IBU: 35 // OG: 24.6

CENTENNIAL ESB

CENTENNIAL ESB

Taste: Toasty, Malty, Resinous

First brewed to celebrate the 100th Anniversary of UAF, this beer is made with malts from the Pacific Northwest, Germany, Belgium, and England. A complex hop bill includes Oregon grown Horizon, Strata, and Centennials used in the boil, then a hefty dry-hop after fermentation of Cryo Cascade and Strata hops from Washington. The classic English ESB yeast strain used to ferment the wort leaves this brew clean, refreshing, and beautifully crystal clear. Cheers!

NEW ENGLAND IPA

NEW ENGLAND IPA

(Available to go in 4-packs of 16oz cans)

Taste: Tropical, Juicy, Fruity

Also known as Hazy or Juicy IPA, this sub-style of India Pale Ale tends to focus more on hop flavor, aroma, and mouthfeel, and less on bitterness and appearance. Our interpretation includes oats, wheat, and barley in the grain bill and is hopped heavily in the boil kettle with Kohatu and Amarillo hops, then transferred through a hop-back full of whole cone Mosaic hops on the way to the fermenation tank. After fermenting with a yeast from a famed Vermont NE IPA brewery, we dry hopped this beauty – twice. First with Cryo Amarillo, Citra, and Mosaic hops, then with whole cone Mosaic and Citra hops. Enjoy!

MAIBOCK LAGER

MAIBOCK LAGER

Taste: Rich, Clean, Malty

Goodbye winter – Hello summer!  Celebrate the change of seasons the way the Germans do.  This annual release was traditionally brewed according to the Bavarian Beer Purity Law of 1516 (Reinheitsgebot) on our steam fired, German style, 3-vessel brewhouse.  After fermentation the beer was cold-conditioned (lagered) in our cellar at 32°F for several weeks.  HooDoo Maibock Lager pours a bright golden color, with a creamy white head on top.  The finest German barley malts lend the beer notes of honey and clean malt, while Hallertauer Hersbruker hops provide just enough bitterness and hop flavor to balance the beer perfectly.  PROST!!

BELGIAN PALE ALE

BELGIAN PALE ALE

Taste: Pear, Biscuit, Nutty

Considered an “everyday” beer in the Flemish provinces of Antwerp and Brabant, this sessionable Belgian Ale is focused on biscuity, toasty malt flavors and aromas along with fruit and spicy flavors derived from the yeast. Throw in a subtle, clean bitterness from East Kent Golding hops and you can taste why this smooth and balanced style has been a Belgian staple in Belgium for well over 300 years.

ABV: 5.6% // IBU: 22 // 0G: 13.7 

VANILLA PORTER

VANILLA PORTER

Taste: Vanilla, Chocolate, Caramel

A rich base of English Maris Otter pale malt, layered with 7 specialty malts from England, Belgium and the US to create this distinctive and unique Porter. After fermentation, we aged the beer on the finest Madagascar Vanilla beans to add an elegant and rich dimension. The heady aroma draws you in to take a sip and from there the beer unfolds it’s layers of complexity. An English ale yeast compliments the malt and vanilla flavors with a characterful nuttiness. The beer finishes with a light roastiness and a hint of vanilla to balance.

Bavarian Weissbier

Bavarian Weissbier

Taste: Banana, Clove, Bready

Summer is in full swing and few beers are more appropriate than our Bavarian Weissbier brewed in the German tradition. Crisp, effervescent, and refreshing, all while carrying with it a richness that only the finest German barley and wheat malts can provide. On top of these fantastic ingredients, the true star in the Weissbier is the yeast: This strain has been used in Germany for centuries.

California Common

Taste: Caramel, Rustic, Toasty

A true American West Coast original. Full-bodied but sessionable, this beer has a number of unique qualities that come together in a delicious way. Toasty flavors create a stable base to support the heavy dosing of German Northern Brewer hops in the boil.

Bavarian Weissbier

Cascade Pale Ale

Taste: Citrus, Grapefruit, Pine

Ah hops…the spice of beer. Each variety has it’s own flavor, aroma, and bitterness qualities. This sessionable ale has a lightly sweet malt base, supporting the beauty of the Cascade hop variety.

Bavarian Weissbier

UK IPA

Taste: Fruity, Grassy, Refreshing

Brewed in the style of an English IPA from the 1800’s, our UK IPA is distinctly English.  A simple malt bill of 100% English Maris Otter malted barley lends the beer a complex but simple base that perfectly carries the distinct flavor and aroma of Golding hops. Goldings have been cultivated since the mid-1700s and are revered for their sweet, fruity contributions to English Ales.  Cheers!
